Paella was a dish that was cooked in a large flat pan . Today many language experts believe the dish to be named after that particular pan. It began with field workers cooking rice and broth over a low fire and continuously adding to it. The size of the dish grew of course with every ingredient added. These meals could feed many workers. And the uniqueness was due to the availability of foods to add frogs, snails and snakes were often the meat. If possible, a wild rabbit or bird may be caught and added.
Perhaps a bit more refined is a popular recipe today known as the seafood paella. Ingredients are chosen by what sounds delicious, not by what is available. Learning the Spanish names for the foods adds to the enjoyment of the dish. Begin by gathering everything needed together .
Several types of fish may be used including 2 medium squid (calamare), 1/2 pound of shrimp (camarones) mussells (mejillones) and 5 cups of fish broth (caldo de pescado). Other ingredients include 2 cups of rice (arroz), tomatoes (tomates) an onion (cebolla) and red pepper (rojo pimiento) and green pepper (verde pimiento). Also a small can of peas (guisantes). For added flavoring, a clove of garlic (ajo) and some parsley ( perejil) are added, along with salt(sal).
Add the aciete de olive to a hot pan and toss in the verde and the rojo pimiente. Next goes in the cebolla, the ajo and the tomates. Cook all of this for 5 minutes, before adding the arroz. Slice the mejillones into strips, add and simmer until the arroz is tender. The rice is the base of this meal and will absorb these flavors nicely. You should now be able to name each ingredient in English and Spanish.
In a separate bowl a mixture of sal, perejil and the caldo de pescado is prepared. Pour slowly into the arroz that is cooking and stir well. It is now time to add the guisantes and the camarones. These being added late in the process to avoid compromising their texture. Another 20 minutes of cooking over medium heat is all that is needed. However if you plan to add other ingredients, it can be done at this point. Remember to learn their Spanish names and use them also .

Greyhounds are utilized extensively by hunters during the hunting season in Spain. An example of a horse breed that was part of history is the Spanish Mustang and the common name for this horse is the colonial Spanish horse.
